The name of this first entry makes it sound like something off of a TGIFRIDAY'S menu, but it's actually a pretty nicely balanced hearty meal. yes, red meat is red meat, but if you don't like steak then get yo' ass out ma' kitchen. furreal.
INGREDIENTS:
1 nice, juicy, NY STRIP or SHELL or T-BONE steak.
1 onion
1 bulb garlic
1 package pre-washed/chopped portobello mushrooms
1 bunch fresh spinach
BOURBON (i like elijah craig for this)
butter
thyme
rosemary
baby gold potatoes
the veggie element is good with this one. it'll be sauteed spinach and mushrooms, and some roasted baby gold potatoes.
timing is the big thing with this one. start off pre-heating the oven to 375 degrees. for prep, first start by cutting a bunch of small gold potatoes into quarters. probably around 10-12 taters for 2 people, more for 3-4 people. dribble a nice amount of olive oil onto a baking pan, and put the taters in the pan. season the taters with about 6-8 cranks of salt and pepp, 2 baby palm-fuls of rosemary, 2 baby-palmfuls of thyme leaves, and squeeze half of a lemon over the top. also put about an inch of butter in there. ALL YA GOTTA DO WITH THOSE TATERS IS THROW THEM IN THE OVEN just do it. By the time the rest of the stuff is done they'll be ready to freak.
....dice half an onion, and 4 cloves of garlic. keep the garlic and the onion on separate parts of the cutting board, because they'll be used for two different things. a tip for peeling the garlic: place a knife flat on top and BOP the knife with your hand pretty hard. that'll crack it and make the skin easy to peel off. bladow.
put some butter and olive oil into a stove pan, and turn the heat up to a med/high flame. place about half of your mound of garlic into the pan (save the other half for your steak) and thrown in most of the onions as well. while that heats, wash your mushrooms, and THOROUGHLY wash the spinach. i put it in a big bowl of water and just shimmy the dirt off with your hands. RINSE it as you take it out of the bowl.
put onions and mushrooms into the pan. it will sizzle, and by this time you'll already be smelling the sweet sweet garlic. stir those mushrooms around, then cover the pan up and turn the heat down a tad.
TO THE STEAK ------>
with the other half of your chopped garlic, rub it into both sides of your steak. make sure it's spread around. season both sides with about 4-5 cranks of salt and pepp, and if you have it, a TAD bit of ground ginger (not too much). now place a fry pan over high heat and throw in a bit of olive oil to cover the surface of the pan. let it heat for about a minute. then.......IN WITH THE STEAK!!!
let that steak sit for a bit. a medium rare will be about 4-5 minutes per side depending on the thickness of the steak. A medium will be around 6. Stir the mushrooms. just before you're ready to flip the steak, take most of the mushrooms out of your other pan with a spoon and put them in the pan with the steak. this will give the mushrooms some of that good beef flavor. NOW put the spinach into the pan you just took the mushrooms from, and stir. add some butter, turn the heat up to MED, and cover.
HOME STRETCH:
flip the steak! scrape off some of the charred garlic with a knife, and pour some BOURBON straight onto your steak. not too much, because you'll blow your face up (elijah craig is 94 proof bourbon). once the other side is cooked to your liking, plate the spinach and leftover mushrooms first, then throw your steak on there, spooning mushrooms over the top. serve with a nice full bodied red wine. SO GOOD.
